Tomato soup is one of my favourites and I do like to make my own. It's quick, easy and is a perfect meal for the whole family. Team it up with homemade bread and it's a great family lunch - especially in winter. This recipe is suitable for vegan's and of course vegetarians. It's dairy-free and if you omit the flour to thicken gluten-free too, as well as being budget-friendly.
Quick & Easy Tomato & Lentil Soup
In just over half an hour you can have a pan of tasty tomato soup ready to eat, at a cost of only 25p per serving. If making your own bread, time it so the bread goes in the oven at the start of the cooking period.
Ingredients
- 1 onion
- 1 clove of garlic
- 2 large carrots
- 1 potato
- 1 tin of chopped tomatoes
- 200g red lentils
- 1 stock cube
- 1 tbsp of flour
- 1 litre of water
- Mixed herbs
Method
- Chop the onion and gently fry in vegetable oil in a large pan.
- Peel and chop the garlic, carrots and potatoes and add them to the onion.
- Stir in the flour to help the soup thicken.
- Add the lentils, water and stock cube, bring to the boil then simmer for 20 mins.
- Add the chopped tomatoes and stir well.
- Once warmed through blend, or alternatively leave chunky, depending on your preference.
- Serve with warm crusty bread - we've tried homemade Foccacia and bread buns recently.
This recipe usually yields at least 6 bowls of soup at a cost of less than £1.50 in total.

It is also a great way of getting children to enjoy vegetables, and best of all they often ask for this soup!
