Do you love flapjacks? I love them and so do my boys. I think nearly everyone loves a good flapjack – but sometimes though when we think we are being healthy, we realise we are actually eating a fair amount of sugar, without really knowing it.
So below you will find my recipe for Free From Flapjacks – which are gluten-free, dairy-free and have no refined sugar either. Please note they do contain nuts though.
#FreeFrom Flapjacks - Gluten-Free, Dairy-Free & Sugar-Free
I like making flapjacks for my sons to take to school in their packed lunches, however with so much sugar that doesn’t always seem to be a good thing, so I’ve started making these gluten free, dairy free and refined-sugar free flapjacks.
Instead of white sugar, this recipe uses Maple Syrup - an unrefined natural sweetener which contains higher levels of beneficial nutrients, antioxidants and phytochemicals than refined white sugar. And they even have a surprise ingredient too – banana!
Free From Flapjacks Recipe
In total it takes about 10 minutes to prepare the flapjacks and a further 20 minutes to cook. It's best to le them cool before easting but in just over half-an-hour you can have really tasty flapjacks for the whole family.
Ingredients
- 3 really ripe bananas mashed
- 200g oats
- 50g seeds - linseed, sunflower, pumpkin, sesame (I just use the same mix of seeds that I sprinkle on my porridge)
- 50g dried cranberries and/or cherries
- 50g mixed nuts
- 3 tbsp maple syrup
- 3 tbsp coconut oil
- 3 tbsp crunchy or smooth peanut butter
Method
- Pre heat the oven to gas mark 5/190C
- Mix all the dry ingredients in a large bowl & add the mashed bananas
- Heat the maple syrup, coconut oil & peanut butter in a saucepan over a low heat until combined
- Add the syrup, oil and peanut butter mix to the dry ingredients & stir well until everything is combined.
- Line an 8-inch square baking tray, I use reusable baking paper, but you can also use greaseproof paper & spread the mix on top. It should be about an inch thick
- Bake for 20 minutes
- Remove from the oven, leave to cool slightly & then divide into squares before it sets firm.
- Store in an airtight container and enjoy.
The boys love taking these to school as part of their packed lunch and I love them with a morning coffee after a swim!
