Everyone I know seems to have grown courgettes this year. Requiring full sun to grow I’m not surprised that this summer, with the UK heatwave, has been a great season for courgette growers. We’ve acquired quite a few from a family allotment and have enjoyed quite a few bowls of summer courgette soup, creating a new recipe that is now one of our family favourites.
In fact, so many soups are easy to make from produce that is easy to grow in the garden from tomatoes to peas and rocket. It's not only healthy but frugal too - helping us to keep fit and keep money in our pockets. Read on to discover the recipes for seven of the best summer soups.

Seven of the Best Summer Soups
Usually harvested between June and September the courgette is from the same family as cucumber, squash and melon. It is the most popular vegetable of the squash family, being extremely versatile, tender and easy to cook.
They traditionally have a deep green skin with firm pale flesh, but also come in yellow varieties, and are also known as zucchini.
Nutritionally courgettes contain very few calories and have high water content – so pretty good if you are watching what you eat. They are an outstanding source of manganese and vitamin C, and is also one of the best sources of dietary fibre that will keep your body in the best shape for the long run, and also have significant levels of potassium, which is key to controlling blood pressure.
Our courgette soup is not only vegan, so naturally, dairy-free but also gluten-free too. It has four simple ingredients – onion, garlic, potato and courgette – plus herbs and spices.
Summer Courgette Soup
Ingredients
- 1 onion - chopped
- 2-3 cloves of garlic – chopped
- 2-3 medium-sized potatoes
- 2-3 small or 1 large yellow courgette
- 1 litre of water
- 1 vegetable stock cube
- Salt & Pepper
- Chives
Method
- Saute the onion and garlic in oil.
- When soft add the potato and stock cube and water and bring to the boil.
- When the potatoes are nearly soft add the courgette.
- Blend, then add salt & pepper to taste and chopped chives.
- Serve with your favourite crusty bread.
Rocket & Spring Onion Soup
Other favourite summer soups include Rocket – another vegetable that is in abundance in our garden again this year.
Rocket, also known as arugula, is one of the nutritious green leafy vegetables of Mediterranean origin. It is also a good source of Fibre and Protein, Vitamins A, B, C and K as well as Zinc and Copper, Folate, Calcium, Iron, Magnesium, Phosphorus, Potassium and Manganese. As well as being very low in calories, it has many vital phytochemicals, anti-oxidants, vitamins, and minerals that may immensely benefit health.
